I need to get rid of some stuff in my kitchen cabinets, so I threw this together. It's infinitely variable.

John's Empty the Cabinets Rice.

1 cup brown rice (or white if you prefer)
1/2 package Tyson grilled chicken strips cubed. Or 1 1/2 cups cooked chicken.
3 tbs sun dried tomatoes
1 jar marinated Progresso artichoke hearts
1/2 Jar Mt Olive roasted red peppers
1 can diced tomatoes
1/2 cup cherry tomatoes quartered
1/2 cup red wine
1/8 cup balsamic vinegar
1 tbs extra virgin olive oil
1 tbs vegetable oil
1 clove garlic crushed
1 tbs Italian seasoning
1 tbs onion powder
1/2 tsp red chili flakes (or to taste)
Parmesan cheese to taste.

Cook Rice. Meanwhile combine oil in pan and heat. When oil shimmers add sun dried tomatoes sauté for one minute, add spices and sauté for another 30 seconds. Add wine and reduce. Then add canned tomatoes and balsamic vinegar and reduce by 1/2. Add roasted peppers, artichoke hearts, garlic, and preheated chicken. add cherry tomatoes and stir for one minute. turn down heat and add rice, cooking till heated through. Top with Parmesan and serve. Serves four.

Looks good! That sort of meal happens to me quite often. Open up the ice box, start yanking out bowls of leftovers and miscellaneous "looks good to me". Big frying pan, commence cooking. Maybe scramble a couple of eggs, pour them in and commence stirring. And everything is better with garlic powder!
