Good morning,

This morning I am starting off with a bowl of Wildman in my Tinderbox Monza. A big beefy guy to start the day with.
Then a hearty breakfast of duck eggs and corned beef hash.
I need to fuel up to work on the excavator.

How do duck eggs taste compared to chicken eggs?

The ratio of yolk to white is reversed.
Chicken eggs are about 2 to 1 white to yolk.
Duck eggs are about 2 to 1 yolk to white.
So bakers and cooks love them. Especially bakers. Makes their products taste richer. Also have chefs that use them in pasta. If you're a toast dipper you're in heaven.
I also have a large Asian market for them.

They're tough as nails and rarely break. In fact opening one takes effort and I've dropped then on the ground without breaking.

They sound fantastic. I need to find some to try.
 
Duck eggs size and taste are comparable to turkey eggs. I find opening the shells easiest using quick blows with a sharp knife to cut the harder shell and tougher inner membrane. Both have more flavor than chicken eggs and more satisfying due to their larger size.
 
We've gone a few years without ducks and finally started a new flock in late summer. In the past I've had Welsh Harlequins and Pekin. This time we're going dual purpose with Silver Appleyards. I also have a mini flock of Midget White turkeys. Come spring we'll have chicken, duck and turkey eggs to choose from!
