Couple of reasons, I was experimenting with it having an alcohol floater to set on fire and the bubbles were hampering my efforts (I decided against it in the end), as it's such a small part that's carbonated it wasn't really making the drink properly fizzy anyway... and I had a dim memory of somebody telling me that with layered or graduated drinks fizz can act to mix it slightly and defeat the purpose... I just figured take it out and avoid the headache.
